Galette des Rois


  • 2 rolls puff pastry

For the cream

  • 60g (4tbsp) almond flour
  • 60g (6 tbsp) powdered sugar
  • 60g (3tbsp) butter
  • 25g (2 tbsp) flour 00
  • 1 egg

For the custard

  • 260ml (1 cup) milk
  • 2 medium egg yolks
  • 30g (2 tbsp) flour
  • 70g (4 tbsp) granulated sugar
  • 4g (1 tsp) vanilla


  1. In a mixing bowl, pour butter, powdered sugar. Mix well. Add egg. Mix. Add almond flour and wheat flour. Whisk well.
  2. In another mixing bowl, pour two egg yolks, vanilla, sugar. Mix. Add flour. Mix. Pour the resulting mixture into the warmed milk. Stir until combined and simmering. Mix both mixtures. Pour the resulting mixture into the puff pastry.
  3. Fold and shape into a cake with another puff pastry. Coat with egg yolk with a little milk and bake at 360°F/180°C for 25 minutes. Serve.
