Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/4 cups granulated sugar
- 3/4 cup extra virgin olive oil
- 1 cup buttermilk
- Zest of 1 lemon or orange (optional)
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy.
- Gradually pour in the olive oil while continuing to beat the mixture until well combined and slightly thickened.
