Swiss roll cake, also known as jelly roll or roulade, is a classic dessert that features a light and fluffy sponge cake rolled up with a sweet filling. Ingredients:
For the cake:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar (for dusting)

- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Your choice of fruit preserves, chocolate ganache, or whipped cream for filling
Instructions:
- Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan or a rimmed baking sheet with parchment paper.
- In a large mixing bowl, beat the eggs, granulated sugar, and vanilla extract together until light and fluffy, about 5 minutes.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Gradually add the dry ingredients to the egg mixture, folding gently until well combined. Be careful not to overmix, as this can deflate the batter.
- Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 12-15 minutes or until the cake is lightly golden and springs back when gently touched.
- While the cake is baking, prepare a clean kitchen towel or a silicone mat by dusting it with powdered sugar.
- Once the cake is done, immediately invert it onto the prepared towel or mat. Carefully peel off the parchment paper.
- Starting from one of the short ends, gently roll up the cake along with the towel or mat. This will help the cake retain its shape when it cools.
- Let the rolled cake cool completely on a wire rack.
- While the cake is cooling, prepare the filling. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Carefully unroll the cooled cake and spread the filling evenly over the surface, leaving a small border around the edges. If desired, you can also spread fruit preserves, chocolate ganache, or whipped cream as the filling.
- Carefully roll the cake back up, starting from the short end and using the towel or mat to help you. The filling will create a spiral pattern inside the cake.
- Once rolled, transfer the Swiss roll cake to a serving platter or a plate, seam side down.
- Refrigerate the cake for at least 1 hour to allow it to set.
- Before serving, you can dust the cake with powdered sugar or decorate it with additional whipped cream, fruit, or chocolate.
