Healthy Veg Soup in Cooker
Making a healthy veg soup in a cooker is a convenient and time-saving method. Here's a recipe for a nutritious and flavorful vegetable soup:
Ingredients:
- 1 cup mixed vegetables (carrots, beans, peas, corn, etc.), chopped
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 4 cups vegetable broth or water
- 1 teaspoon cumin seeds
- 1 teaspoon oil or ghee
- Salt to taste
- Black pepper powder to taste
- Fresh coriander leaves, chopped (for garnishing)
Instructions:
- Heat oil or ghee in a cooker over medium heat.
- Add cumin seeds to the cooker and let them splutter.
- Add minced garlic and grated ginger to the cooker. Sauté for a minute until they become fragrant.
- Add the finely chopped onion to the cooker and sauté until it turns translucent.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the mixed vegetables to the cooker and mix well with the onions and tomatoes.
- Add vegetable broth or water to the cooker and stir everything together.
- Add salt and black pepper powder to taste. Adjust the seasonings according to your preference.
- Close the cooker with its lid and cook on medium heat until it reaches high pressure. Once the pressure is reached, reduce the heat to low and cook for about 5 minutes.
- Turn off the heat and let the pressure release naturally.
- Open the cooker and check the consistency of the soup. If it's too thick, you can add some more water or vegetable broth to adjust the consistency.
- Garnish the healthy veg soup with freshly chopped coriander leaves.
Serve the nutritious and delicious veg soup hot. You can enjoy it as is or with a side of whole wheat bread or a light salad. This soup is packed with the goodness of vegetables and is a great way to incorporate them into your diet.
