Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
  2. In a large mixing bowl, combine the wheat bran and buttermilk. Let it sit for about 5 minutes to allow the bran to absorb the liquid.
  3. Add the vegetable oil, brown sugar, egg, and vanilla extract to the bran mixture. Stir well to combine.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the bran mixture, stirring until just combined. Be careful not to overmix; a few lumps are fine. If desired, fold in the raisins or other dried fruit.
  6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
