Bran Muffins

Ingredients:
- 1 ½ cups wheat bran
- 1 cup buttermilk

- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt

Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
- In a large mixing bowl, combine the wheat bran and buttermilk. Let it sit for about 5 minutes to allow the bran to absorb the liquid.
- Add the vegetable oil, brown sugar, egg, and vanilla extract to the bran mixture. Stir well to combine.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the bran mixture, stirring until just combined. Be careful not to overmix; a few lumps are fine. If desired, fold in the raisins or other dried fruit.
- Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes. Then transfer them to a wire rack to cool completely.
- Once cooled, the bran muffins are ready to be enjoyed. They can be stored in an airtight container at room temperature for a few days, or they can be frozen for longer storage.
