  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk

For the peanut butter frosting:

  • ½ cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • Optional: Mini peanut butter cups or chopped peanuts for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and creamy peanut butter until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Scoop the batter into the prepared cupcake liners, filling each liner about 2/3 full.
  7. Bake the cupcakes in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cupcakes from the oven and allow them to cool in the muffin tin for a few minutes. Then transfer them to a wire rack to cool completely before frosting.
  9. While the cupcakes are cooling, prepare the peanut butter frosting. In a large mixing bowl, cream together the softened butter and creamy peanut butter until smooth.
  10. Gradually add the powdered sugar, mixing on low speed until well combined.
  11. Add 2 tablespoons of milk to the frosting and mix until smooth and creamy. If needed, add an additional tablespoon of milk to achieve a spreadable consistency.
  12. Once the cupcakes are completely cooled, frost them with the peanut butter frosting using a piping bag or an offset spatula.
  13. Optional: Garnish the cupcakes with mini peanut butter cups or chopped peanuts for extra flavor and decoration.
  14. Serve and enjoy these delicious peanut butter cupcakes!
