Ingredients:

  • 2 cups cooked rice (preferably leftover rice, cooled)
  • 1 cup mixed vegetables (carrots, peas, bell peppers, corn, etc.), finely chopped
  • 1 onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 green chili, finely chopped (adjust to your spice preference)
  • 2 tablespoons oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chili sauce (optional)
  • 1 tablespoon tomato ketchup
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnishing)

Instructions:

  1. Heat oil in a large pan or wok over medium-high heat.
  2. Add minced garlic and sauté for a minute until it becomes fragrant.
  3. Add chopped onions and green chili to the pan. Sauté until the onions turn translucent.
  4. Add the finely chopped mixed vegetables to the pan and stir-fry them for a few minutes until they are cooked yet crisp. Make sure not to overcook the vegetables.
  5. Add turmeric powder, red chili powder, and salt to the pan. Mix well to coat the vegetables with the spices.
  6. Push the vegetables to one side of the pan and create some empty space on the other side. Pour a little oil in the empty space and add the cooked rice to it.
  7. Gently break up the rice with a spatula and mix it with the vegetables. Continue stirring and tossing everything together for a few minutes to ensure the rice is evenly coated with the flavors and spices.
  8. Drizzle soy sauce, chili sauce (if using), and tomato ketchup over the rice and vegetables. Mix well to incorporate the sauces into the fried rice.
  9. Cook for another 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
  10. Taste and adjust the seasonings as needed.
  11. Garnish the veg fried rice with freshly chopped coriander leaves.
