Street Style Veg Fried Rice
Street-style veg fried rice is a popular and flavorful dish commonly found in street food stalls across India and other parts of Asia. It's a delicious combination of rice, mixed vegetables, and aromatic spices. Here's a recipe for street-style veg fried rice:
Ingredients:
- 2 cups cooked rice (preferably leftover rice, cooled)
- 1 cup mixed vegetables (carrots, peas, bell peppers, corn, etc.), finely chopped
- 1 onion, finely chopped
- 2-3 garlic cloves, minced
- 1 green chili, finely chopped (adjust to your spice preference)
- 2 tablespoons oil
- 1 tablespoon soy sauce
- 1 tablespoon chili sauce (optional)
- 1 tablespoon tomato ketchup
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- Salt to taste
- Fresh coriander leaves, chopped (for garnishing)
Instructions:
- Heat oil in a large pan or wok over medium-high heat.
- Add minced garlic and sauté for a minute until it becomes fragrant.
- Add chopped onions and green chili to the pan. Sauté until the onions turn translucent.
- Add the finely chopped mixed vegetables to the pan and stir-fry them for a few minutes until they are cooked yet crisp. Make sure not to overcook the vegetables.
- Add turmeric powder, red chili powder, and salt to the pan. Mix well to coat the vegetables with the spices.
- Push the vegetables to one side of the pan and create some empty space on the other side. Pour a little oil in the empty space and add the cooked rice to it.
- Gently break up the rice with a spatula and mix it with the vegetables. Continue stirring and tossing everything together for a few minutes to ensure the rice is evenly coated with the flavors and spices.
- Drizzle soy sauce, chili sauce (if using), and tomato ketchup over the rice and vegetables. Mix well to incorporate the sauces into the fried rice.
- Cook for another 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
- Taste and adjust the seasonings as needed.
- Garnish the veg fried rice with freshly chopped coriander leaves.
