Fried rice is a versatile and delicious dish that can be made using leftover rice and various ingredients. Here's a basic recipe for making fried rice:

Ingredients:

  • 3 cups cooked rice (preferably chilled or day-old rice)
  • 2 tablespoons vegetable oil
  • 1 cup diced vegetables (such as carrots, peas, bell peppers, corn, or green beans)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Optional: cooked meat (such as diced chicken, shrimp, or ham)

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the diced onion and minced garlic to the pan and cook until they become fragrant and slightly softened.
  3. If using raw meat, add it to the pan and cook until it's cooked through. If using cooked meat, you can add it later in the process.
  4. Add the diced vegetables to the pan and stir-fry for a few minutes until they are slightly tender.
  5. Push the vegetables to one side of the pan and pour the beaten eggs into the empty side. Scramble the eggs until they are cooked.
  6. Add the chilled or day-old cooked rice to the pan and break up any clumps with a spatula. Stir-fry the rice together with the vegetables and eggs.
  7. If you're using cooked meat, add it to the pan at this point and stir-fry for another minute to heat it through.
  8. Drizzle the soy sauce and oyster sauce (if using) over the rice. Stir-fry everything together, ensuring that the sauce is evenly distributed.
  9. Taste the fried rice and season with salt and pepper as desired. Adjust the amount of soy sauce or oyster sauce to suit your taste.
  10. Continue stir-frying the fried rice for a few more minutes until everything is heated through and well combined.
  11. Once the fried rice is cooked, remove it from the heat and serve it hot. You can garnish it with chopped green onions or cilantro if desired.
