Ingredients:

  • 1 cup fine semolina (rava)
  • 1/4 cup rice flour
  • 2 tablespoons melted ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt (adjust to taste)
  • Water (as needed)
  • Oil for deep-frying

Instructions:

  1. In a mixing bowl, combine the semolina, rice flour, cumin seeds, sesame seeds, red chili powder, turmeric powder, and salt. Mix well to distribute the spices evenly.
  2. Add the melted ghee or oil to the dry mixture and mix it in with your fingers until it resembles breadcrumbs.
  3. Gradually add water, little by little, and knead the mixture to form a smooth and firm dough. The dough should hold together and not be too sticky or crumbly.
  4. Divide the dough into small portions and shape them into small balls.
  5. Take a dough ball and roll it out into a thin, flat disc on a lightly greased surface or between two sheets of plastic wrap. Repeat with the remaining dough balls.
  6. Heat oil in a deep pan or kadai for deep-frying over medium heat.
  7. Carefully slide a rolled disc of dough into the hot oil. Fry until it turns golden brown and crispy. Flip it occasionally to ensure even frying. Adjust the heat as needed to maintain a steady temperature.
  8. Once the crispies are fried to a golden color, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.
  9. Repeat the frying process with the remaining rolled discs of dough.
  10. Allow the semolina salt crispies to cool completely before storing them in an airtight container.
