Ingredients:
- 3 medium-sized tomatoes, finely chopped
- 2 medium-sized onions, finely chopped
- 2 green chilies, slit
- 1 tablespoon oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnishing)
Instructions:
- Heat oil or ghee in a pan or kadai over medium heat.
- Add cumin seeds and let them splutter.
- Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add turmeric powder, red chili powder, and coriander powder to the pan. Mix well and cook the spices for a minute.
- Add the finely chopped tomatoes to the pan and mix everything together. Cook the tomatoes until they become soft and mushy.
- Once the tomatoes are cooked, use a spatula or potato masher to mash them slightly. This will help in creating a thicker curry consistency.

- Cover the pan and let the curry simmer for 5-7 minutes on low heat, allowing the flavors to meld together.
- After simmering, add garam masala to the curry and mix well.
- Garnish with freshly chopped coriander leaves.
