Here's a simple recipe for tomato onion curry, a flavorful and versatile Indian curry that can be enjoyed with rice, roti, or bread:

Ingredients:

  • 3 medium-sized tomatoes, finely chopped
  • 2 medium-sized onions, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnishing)

Instructions:

  1. Heat oil or ghee in a pan or kadai over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add turmeric powder, red chili powder, and coriander powder to the pan. Mix well and cook the spices for a minute.
  6. Add the finely chopped tomatoes to the pan and mix everything together. Cook the tomatoes until they become soft and mushy.
  7. Once the tomatoes are cooked, use a spatula or potato masher to mash them slightly. This will help in creating a thicker curry consistency.
  8. Add salt to taste and mix well.
  9. Add water to adjust the consistency of the curry. You can add more water for a thinner curry or keep it thick, depending on your preference.
  10. Cover the pan and let the curry simmer for 5-7 minutes on low heat, allowing the flavors to meld together.
  11. After simmering, add garam masala to the curry and mix well.
  12. Garnish with freshly chopped coriander leaves.

Your simple tomato onion curry is ready to be served. It pairs well with steamed rice, roti, or any Indian bread. Enjoy the delicious flavors of this comforting and easy-to-make curry!
