Tortellini Soup

Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 stalks celery, sliced
- 4 cups chicken or vegetable broth
- 1 can diced tomatoes (14 ounces)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 9 ounces fresh or frozen tortellini (cheese or meat-filled)
- 2 cups fresh spinach or kale, chopped
- Grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant.
- Add the sliced carrots and celery to the pot, and cook for a few more minutes until they begin to soften.
- Pour in the chicken or vegetable broth and diced tomatoes with their juices. Stir in the dried basil, dried oregano, salt, and black pepper. Bring the mixture to a boil.
- Once the soup reaches a boil, reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to meld together.
- Add the tortellini to the simmering soup and cook according to the package instructions. Fresh tortellini usually cook within 3-5 minutes, while frozen tortellini may take a bit longer.
- Once the tortellini is cooked, stir in the chopped spinach or kale. Let it wilt in the soup for a minute or two.
- Taste the soup and adjust the seasoning if needed by adding more salt and pepper.
- Remove the soup from heat and ladle it into serving bowls. Sprinkle grated Parmesan cheese over each serving and garnish with fresh parsley, if desired.
