Spicy paneer chili cheese toast sandwich is a flavorful and indulgent Indian sandwich that combines spicy paneer (Indian cottage cheese), chili, and melted cheese. It's a perfect snack or breakfast option for spice lovers. Here's a recipe to make a spicy paneer chili cheese toast sandwich:

Ingredients:

For the filling:

  • 200 grams paneer, crumbled
  • 1 small onion, finely chopped
  • 1 small capsicum (bell pepper), finely chopped
  • 1 green chili, finely chopped (adjust to your spice preference)
  • 2 tablespoons tomato ketchup
  • 1 teaspoon chili sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon oil

For the sandwich:

  • 8 bread slices
  • Butter, softened
  • Grated cheese (cheddar or mozzarella)
  • Chopped coriander leaves (optional, for garnish)

Instructions:

  1. In a pan, heat oil over medium heat. Add the finely chopped onion, capsicum, and green chili. Sauté them for a few minutes until they become slightly soft.
  2. Add the crumbled paneer to the pan and mix well with the sautéed vegetables.
  3. Add tomato ketchup, chili sauce, soy sauce, garam masala, red chili powder, and salt to the paneer mixture. Mix everything together and cook for a couple of minutes until the flavors blend. Remove from heat and let the filling cool down slightly.
  4. Preheat a sandwich maker or a griddle.
  5. Take two bread slices and butter one side of each slice.
  6. Place a generous amount of the paneer filling on the non-buttered side of one bread slice.
  7. Sprinkle some grated cheese over the paneer filling.
  8. Cover the filling with the other bread slice, buttered side facing outwards.
  9. Place the prepared sandwich on the preheated sandwich maker or griddle and cook until the bread turns golden brown and the cheese melts. If using a griddle, you can press the sandwich with a spatula to flatten it slightly.
  10. Once the sandwich is cooked, remove it from the sandwich maker or griddle and let it cool for a minute.
  11. Cut the spicy paneer chili cheese toast sandwich diagonally into two halves or into smaller pieces if desired.
  12. Garnish with chopped coriander leaves (optional).

Serve the spicy paneer chili cheese toast sandwich hot with ketchup or chutney of your choice. It's a delightful combination of spicy paneer, melted cheese, and crispy bread that will satisfy your taste buds. Enjoy!
