Ingredients:

  • 4 ounces semisweet or bittersweet chocolate, finely chopped
  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar, divided
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • Powdered sugar, for dusting (optional)
  • Whipped cream or vanilla ice cream, for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease the bottoms and sides of four 6-ounce ramekins with butter. Dust them with granulated sugar, tapping out any excess. Place the ramekins on a baking sheet and set aside.
  2. In a heatproof bowl, combine the chopped chocolate and butter. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Stir the chocolate and butter occasionally until melted and smooth. Remove the bowl from the heat and let it cool slightly.
  3. In a mixing bowl, whisk together 1/4 cup of granulated sugar and the egg yolks until the mixture is thick and pale yellow. Add the melted chocolate mixture and stir until well combined.
  4. In a separate mixing bowl, using an electric mixer, beat the egg whites on medium speed until frothy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and continue beating until stiff peaks form.
  5. Gently fold about one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites, taking care not to overmix and deflate the mixture. The batter should be light and fluffy.
  6. Spoon the chocolate batter into the prepared ramekins, filling them about three-quarters full.
  7. Using a straight edge or a spatula, level off the tops of the soufflés.
  8. Bake the soufflés on the baking sheet in the preheated oven for about 12-15 minutes, or until they have risen and are set around the edges but still slightly jiggly in the center.
  9. Remove the soufflés from the oven and serve them immediately. Dust the tops with powdered sugar, if desired.
  10. You can serve the chocolate soufflés as they are, or add a dollop of whipped cream or a scoop of vanilla ice cream on top for added indulgence.
  11. Enjoy the chocolate soufflés immediately while they are puffed up and warm. They are best eaten right out of the oven.
