Pineapple upside-down cake is a classic dessert that features a caramelized pineapple topping with a buttery cake base. Here's a recipe to guide you in making a delicious pineapple upside-down cake:

Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1 can pineapple slices (about 20 ounces), drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a round 9-inch cake pan.
  2. Melt the butter and pour it into the bottom of the greased cake pan, making sure to coat the entire bottom.
  3. Sprinkle the brown sugar evenly over the melted butter, pressing it down gently.
  4. Arrange the pineapple slices on top of the brown sugar in a single layer. You can place a cherry in the center of each pineapple slice and fill any remaining gaps with additional cherries.
  5. In a medium bowl, whisk together the flour, baking powder, and salt.
  6. In a separate large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, ensuring not to overmix.
  8. Pour the cake batter over the pineapple slices in the cake pan, spreading it evenly to cover the fruit.
  9. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for about 10 minutes.
  11. Place a serving plate upside down on top of the cake pan. Using oven mitts, carefully flip the cake pan over, releasing the cake onto the serving plate. Gently lift off the pan, revealing the pineapple topping.
  12. Allow the cake to cool completely before serving. You can serve it at room temperature or chilled.
