Pineapple upside-down cupcakes are a delightful twist on the classic pineapple upside-down cake, but in individual cupcake form. Here's a recipe to guide you in making pineapple upside-down cupcakes:
Ingredients:
- 1 can pineapple slices, drained
- Maraschino cherries
- 1/2 cup unsalted butter, melted
- 3/4 cup packed brown sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a small bowl, mix the melted butter and brown sugar until well combined. Spoon about a tablespoon of the mixture into each cupcake liner, spreading it to cover the bottom.
- Place a pineapple slice on top of the butter-sugar mixture in each liner. If needed, you can cut the pineapple slices to fit the size of the cupcakes. Add a maraschino cherry to the center of each pineapple slice.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, ensuring not to overmix.
- Divide the batter evenly among the cupcake liners, covering the pineapple slices.
- Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes. Then transfer them to a wire rack to cool completely.
- Once the cupcakes are cooled, gently remove the cupcake liners.
- Serve the pineapple upside-down cupcakes with the pineapple and cherry side facing up. The caramelized topping should be on top of each cupcake.
