Pineapple upside-down cupcakes are a delightful twist on the classic pineapple upside-down cake, but in individual cupcake form. Here's a recipe to guide you in making pineapple upside-down cupcakes:

Ingredients:

  • 1 can pineapple slices, drained
  • Maraschino cherries
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a small bowl, mix the melted butter and brown sugar until well combined. Spoon about a tablespoon of the mixture into each cupcake liner, spreading it to cover the bottom.
  3. Place a pineapple slice on top of the butter-sugar mixture in each liner. If needed, you can cut the pineapple slices to fit the size of the cupcakes. Add a maraschino cherry to the center of each pineapple slice.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. In a separate large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, ensuring not to overmix.
  7. Divide the batter evenly among the cupcake liners, covering the pineapple slices.
  8. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes. Then transfer them to a wire rack to cool completely.
  10. Once the cupcakes are cooled, gently remove the cupcake liners.
  11. Serve the pineapple upside-down cupcakes with the pineapple and cherry side facing up. The caramelized topping should be on top of each cupcake.
