Vegan Tofu and Eggplant Binagoongan | Filipino Vegan Binagoongan Recipe
Ingredients
- 400g korean silken tofu (pressed, freezed and thawed for three cycles)
- 2 tbsp nutritional yeast
- 1/4 cup cornstarch
- 1 tsp garlic salt
- 1 tsp paprika
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1/4 cup oat milk
air fry at 180°C for 10-15 minutes, flip halfway
- oil spray
- 5 cloves garlic
- 1 red onion
- 2 bell peppers
- 3 pcs tomatoes
- 2 medium eggplants
- 2 green chilies
- 2 tbsp cooking oil
- 3 tbsp vegan bagoong (vegan shirmp paste)
- 1/4 cup water
- season with salt and pepper to taste
