Ingredients:
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1 bell pepper, diced (optional)
- 1 pound (450 grams) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 3 tablespoons curry powder (Japanese curry powder is recommended)
- 3 cups chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon ketchup
- 1 tablespoon honey or sugar (optional, to taste)
- Salt and pepper, to taste
- Steamed rice, for serving
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the sliced onion to the pot and sauté for a few minutes until it becomes translucent.
- Add the chicken to the pot and cook until it is browned on all sides.
- Add the carrots, potatoes, and bell pepper (if using) to the pot and cook for another 5 minutes, stirring occasionally.
- Sprinkle the curry powder over the ingredients in the pot and stir well to coat everything evenly.
- Pour in the chicken broth, soy sauce, Worcestershire sauce, and ketchup. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30-40 minutes, or until the vegetables are tender and the flavors have melded together.
- If desired, you can add honey or sugar to balance the flavors and add a touch of sweetness. Season with salt and pepper to taste.
- Serve the Japanese chicken curry over steamed rice. You can also garnish it with chopped green onions or pickled vegetables for added freshness and tanginess.
