  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or chopped
  • 1 cup uncooked white rice

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
  2. Add the minced garlic, dried thyme, and bay leaf to the pot. Stir and cook for another minute until fragrant.
