Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to your desired level of spiciness)
  • 1/2 cup hot sauce (such as Frank's RedHot)
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • Vegetable oil, for frying

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Set up a breading station with three shallow bowls or plates. In one bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, paprika, garlic powder, and cayenne pepper.
  4. Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off. Then press it into the breadcrumb mixture, coating it evenly on both sides. Set the breaded chicken breasts aside.
  5. In a small saucepan, heat the hot sauce, honey, and unsalted butter over low heat until the butter is melted and the mixture is well combined. Keep the hot honey sauce warm while you cook the chicken.
  6. Heat enough vegetable oil in a large skillet over medium heat to shallow fry the chicken. Once the oil is hot, add the breaded chicken breasts and cook for about 3-4 minutes per side, or until golden brown and cooked through.
  7. Transfer the cooked chicken cutlets to the prepared baking sheet and brush them generously with the hot honey sauce.
  8. Place the baking sheet with the chicken cutlets in the preheated oven for about 5 minutes to allow the hot honey sauce to caramelize slightly.
