Potato medallions: perfect for a quick and delicious dinner
Ingredients
- 1 kg (2 pounds) of peeled potatoes;
- 40g (3 tbsp) shredded parmesan;
- 80g (½ cup) cornstarch;
- ¼ tsp nutmeg;
- Salt and pepper;
- 300g (1 ½ cup) minced meat (beef+pork);
- 1 medium white onion, chopped;
- 1 tsp garlic powder;
- 1 medium carrot, shredded;
- 10g (2 tbsp) fresh parsley, chopped.
