Pastry ravioli
Pastry ravioli is a delicious twist on the traditional pasta-based ravioli. Instead of using pasta dough, the ravioli is made with a flaky pastry dough that is filled with a savory or sweet filling, depending on your preference. The pastry dough is easy to make and can be filled with a variety of ingredients, making it a versatile dish that can be served as an appetizer, main course, or dessert.
To make pastry ravioli, you will need:
Ingredients:
For the pastry dough:
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg
- 1/4 cup cold water
For the filling:
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the assembly:
- 1 large egg, beaten
- Flour, for dusting
- 1/4 cup grated Parmesan cheese
Instructions:
- To make the pastry dough, whisk together the flour and salt in a large bowl. Add the cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture is crumbly.
- In a small bowl, whisk together the egg and cold water. Pour the egg mixture into the flour mixture and stir until the dough comes together. Knead the dough on a floured surface until it is smooth and elastic.
- Divide the dough into two equal pieces and shape each piece into a flat disc. Wrap the discs in plastic wrap and refrigerate for at least 30 minutes.
- To make the filling, mix together the ricotta cheese, Parmesan cheese, salt, and pepper in a bowl until well combined.
- Preheat the oven to 400°F (200°C).
- On a floured surface, roll out one of the pastry dough discs to 1/8-inch thickness. Use a round cutter or glass to cut out circles of dough.
- Spoon a small amount of filling onto each circle of dough. Brush the edges of the dough with the beaten egg, then fold the dough over to form a half-moon shape. Use a fork to press the edges of the dough together and seal the ravioli.
- Repeat the process with the remaining pastry dough and filling.
- Place the pastry ravioli on a baking sheet lined with parchment paper. Brush the tops of the ravioli with beaten egg and sprinkle with Parmesan cheese.
- Bake the ravioli for 15-20 minutes, or until they are golden brown and puffed up.
- Serve the pastry ravioli warm and enjoy!
Note: You can experiment with different fillings, such as spinach and feta cheese, pumpkin and sage, or Nutella and banana.
