Pastry ravioli

Pastry ravioli is a delicious twist on the traditional pasta-based ravioli. Instead of using pasta dough, the ravioli is made with a flaky pastry dough that is filled with a savory or sweet filling, depending on your preference. The pastry dough is easy to make and can be filled with a variety of ingredients, making it a versatile dish that can be served as an appetizer, main course, or dessert.

To make pastry ravioli, you will need:

For the pastry dough:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg
  • 1/4 cup cold water

For the filling:

  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the assembly:

  • 1 large egg, beaten
  • Flour, for dusting
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. To make the pastry dough, whisk together the flour and salt in a large bowl. Add the cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture is crumbly.
  2. In a small bowl, whisk together the egg and cold water. Pour the egg mixture into the flour mixture and stir until the dough comes together. Knead the dough on a floured surface until it is smooth and elastic.
  3. Divide the dough into two equal pieces and shape each piece into a flat disc. Wrap the discs in plastic wrap and refrigerate for at least 30 minutes.
  4. To make the filling, mix together the ricotta cheese, Parmesan cheese, salt, and pepper in a bowl until well combined.
  5. Preheat the oven to 400°F (200°C).
  6. On a floured surface, roll out one of the pastry dough discs to 1/8-inch thickness. Use a round cutter or glass to cut out circles of dough.
  7. Spoon a small amount of filling onto each circle of dough. Brush the edges of the dough with the beaten egg, then fold the dough over to form a half-moon shape. Use a fork to press the edges of the dough together and seal the ravioli.
  8. Repeat the process with the remaining pastry dough and filling.
  9. Place the pastry ravioli on a baking sheet lined with parchment paper. Brush the tops of the ravioli with beaten egg and sprinkle with Parmesan cheese.
  10. Bake the ravioli for 15-20 minutes, or until they are golden brown and puffed up.
  11. Serve the pastry ravioli warm and enjoy!

Note: You can experiment with different fillings, such as spinach and feta cheese, pumpkin and sage, or Nutella and banana.
