Ingredients:
- 2 lobster tails, shells removed and meat chopped into bite-sized pieces
- 3 cups cooked rice (preferably chilled or day-old rice)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 carrot, diced
- 1/2 cup peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- Salt and pepper to taste
- Green onions, sliced for garnish
Instructions:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chopped lobster meat and cook for about 2-3 minutes until it turns opaque and is cooked through. Remove the lobster from the skillet and set it aside.
- In the same skillet, add another tablespoon of vegetable oil and heat it over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
- Add the diced carrot and peas to the skillet and continue to sauté for another 2-3 minutes until the vegetables are slightly softened.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Allow the eggs to cook for a few seconds until they start to set. Then, scramble the eggs using a spatula and mix them with the sautéed vegetables.
- Add the cooked rice to the skillet and stir well to combine with the vegetables and eggs. Break up any clumps of rice with the spatula.
- Drizzle the soy sauce and oyster sauce over the rice. Stir-fry the rice for a few minutes, ensuring that the sauces are evenly distributed and the rice is heated through.
- Return the cooked lobster meat to the skillet and toss it with the fried rice. Season with salt and pepper to taste. Stir-fry for another minute or two to incorporate the lobster with the rice and warm it up.
- Remove the skillet from the heat. Garnish the Lobster Fried Rice with sliced green onions for added freshness and presentation.
