Ingredients:
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the filling:
- 1 cup heavy cream
- 1 cup milk
- 8 ounces semisweet chocolate, chopped
- 1/4 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
For the topping (optional):
- Whipped cream
- Chocolate shavings
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
- Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.
- In a medium saucepan, combine the heavy cream and milk. Heat the mixture over medium heat until it starts to simmer, but do not let it boil.
- Remove the saucepan from the heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until well combined.
- Slowly pour a small amount of the chocolate mixture into the egg yolk mixture, whisking constantly to temper the eggs. Continue pouring the chocolate mixture gradually while whisking.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a pudding-like consistency. This should take about 5 minutes.
- Remove the saucepan from the heat and stir in the butter and vanilla extract until fully incorporated.
- Pour the chocolate filling into the cooled pie crust, spreading it evenly.
- Cover the pie with plastic wrap, ensuring it touches the surface of the filling to prevent a skin from forming. Chill the pie in the refrigerator for at least 4 hours, or until set.
- Before serving, you can garnish the pie with whipped cream and chocolate shavings, if desired.
