Easy Chocolate Pie Recipe

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 1 cup heavy cream
  • 1 cup milk
  • 8 ounces semisweet chocolate, chopped
  • 1/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the topping (optional):

  • Whipped cream
  • Chocolate shavings

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
  4. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.
  5. In a medium saucepan, combine the heavy cream and milk. Heat the mixture over medium heat until it starts to simmer, but do not let it boil.
  6. Remove the saucepan from the heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
  7. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until well combined.
  8. Slowly pour a small amount of the chocolate mixture into the egg yolk mixture, whisking constantly to temper the eggs. Continue pouring the chocolate mixture gradually while whisking.
  9. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a pudding-like consistency. This should take about 5 minutes.
  10. Remove the saucepan from the heat and stir in the butter and vanilla extract until fully incorporated.
  11. Pour the chocolate filling into the cooled pie crust, spreading it evenly.
  12. Cover the pie with plastic wrap, ensuring it touches the surface of the filling to prevent a skin from forming. Chill the pie in the refrigerator for at least 4 hours, or until set.
  13. Before serving, you can garnish the pie with whipped cream and chocolate shavings, if desired.
