Ahhmazing Honey Cake Recipe
The honey cake is moist, flavorful, and perfect for any occasion. The glaze adds a touch of sweetness, and the optional cream cheese frosting adds a creamy and tangy element. Enjoy this ahhmazing honey cake with a cup of tea or coffee!
Ingredients:
For the cake:
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup honey
- 1/2 cup buttermilk
- 1/2 cup strong brewed coffee
- 1 teaspoon vanilla extract
For the glaze:
- 1/4 cup honey
- 2 tablespoons fresh lemon juice
For the frosting (optional):
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next one.
- Add the honey, buttermilk, brewed coffee, and vanilla extract to the butter mixture. Mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by combining the honey and lemon juice in a small saucepan. Heat the mixture over low heat until it becomes thin and runny. Set aside.
- Once the cake is baked, remove it from the oven and immediately poke several holes all over the top using a skewer or fork.
- Pour the honey and lemon glaze evenly over the warm cake, allowing it to soak into the holes.
- Let the cake cool completely in the pan on a wire rack.
- If desired, prepare the frosting by beating together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Spread the frosting over the cooled cake.
- Cut the honey cake into slices and serve.
