Ingredients:

For the cake:

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup honey
  • 1/2 cup buttermilk
  • 1/2 cup strong brewed coffee
  • 1 teaspoon vanilla extract

For the glaze:

  • 1/4 cup honey
  • 2 tablespoons fresh lemon juice

For the frosting (optional):

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next one.
  5. Add the honey, buttermilk, brewed coffee, and vanilla extract to the butter mixture. Mix until well combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the glaze by combining the honey and lemon juice in a small saucepan. Heat the mixture over low heat until it becomes thin and runny. Set aside.
  10. Once the cake is baked, remove it from the oven and immediately poke several holes all over the top using a skewer or fork.
  11. Pour the honey and lemon glaze evenly over the warm cake, allowing it to soak into the holes.
  12. Let the cake cool completely in the pan on a wire rack.
  13. If desired, prepare the frosting by beating together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Spread the frosting over the cooled cake.
