Chicken Triple Schezwan Fried Rice

Chicken Triple Schezwan Fried Rice is a popular Indo-Chinese dish that combines spicy Schezwan sauce, chicken, and an assortment of vegetables with fried rice. It's a flavorful and satisfying dish that can be enjoyed as a main course.

Ingredients:

  • 2 cups cooked basmati rice (cooled)
  • 250 grams boneless chicken, diced
  • 1/2 cup carrots, finely chopped
  • 1/2 cup bell peppers (capsicum), finely chopped
  • 1/2 cup cabbage, finely chopped
  • 1/4 cup spring onions, chopped
  • 3 tablespoons Schezwan sauce (adjust according to your spice preference)
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 2 teaspoons garlic, minced
  • 2 teaspoons ginger, minced
  • 2 tablespoons cooking oil
  • Salt to taste
  • Black pepper powder to taste

Instructions:

  1. Heat oil in a large pan or wok on medium-high heat.
  2. Add minced ginger and garlic to the pan and sauté for a minute until fragrant.
  3. Add diced chicken to the pan and cook until it turns golden brown and is cooked through. Remove the cooked chicken from the pan and set it aside.
  4. In the same pan, add the chopped carrots, bell peppers, and cabbage. Stir-fry the vegetables for a few minutes until they are slightly tender.
  5. Push the vegetables to one side of the pan and add the Schezwan sauce to the cleared space. Stir-fry the sauce for a minute to cook off the raw flavor.
  6. Mix the sauce with the vegetables and add cooked chicken back to the pan. Toss everything together to coat the chicken and vegetables with the Schezwan sauce.
  7. Add soy sauce, vinegar, salt, and black pepper powder to the pan. Mix well to combine all the flavors.
  8. Add the cooked basmati rice to the pan and gently mix it with the chicken and vegetable mixture. Make sure the rice is well coated with the sauce.
  9. Stir-fry the rice for a few minutes until it is heated through and all the flavors are well incorporated.
  10. Garnish with chopped spring onions and give it a final toss.
  11. Serve the Chicken Triple Schezwan Fried Rice hot, garnished with some extra spring onions on top.
