Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ⅔ cup extra-virgin olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • ½ cup hot water
  • Powdered sugar, for dusting (optional)
  • Fresh berries or whipped cream, for serving (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, whisk together the granulated sugar, olive oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Pour in the hot water and stir until the batter is smooth and well incorporated.
  6. Transfer the batter to the prepared cake pan, spreading it evenly.
  7. Bake in the preheated oven for approximately 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  9. Once the cake has cooled, you can dust it with powdered sugar for a decorative touch, if desired.
  10. Serve the chocolate olive oil cake on its own or with fresh berries and a dollop of whipped cream for added indulgence.

Enjoy the moist and rich flavors of the chocolate olive oil cake, a delightful treat for chocolate lovers!
