Easy Homemade Bagels

Ingredients:
- 1 1/2 cups warm water
- 2 teaspoons active dry yeast
- 2 tablespoons granulated sugar
- 4 cups bread flour (you can also use all-purpose flour)
- 2 teaspoons salt
- 1 tablespoon vegetable oil (for greasing)
For the boiling water bath:
- 2 quarts water
- 2 tablespoons granulated sugar
- 1 tablespoon baking soda
Optional toppings:
- Sesame seeds, poppy seeds, dried onion flakes, coarse salt, etc.
Instructions:
- In a large mixing bowl, combine the warm water, yeast, and sugar. Stir until the yeast and sugar have dissolved. Let it sit for about 5 minutes, or until the mixture becomes frothy.
- Add the flour and salt to the yeast mixture. Stir until a dough forms.
- Transfer the dough to a lightly floured surface and knead for about 10 minutes, or until the dough is smooth and elastic. You can also use a stand mixer with a dough hook attachment for this step.
- Shape the dough into a ball and place it in a greased bowl. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.

- While the bagels are rising, prepare the boiling water bath. In a large pot, bring the water to a boil. Add the sugar and baking soda, stirring until they dissolve.
- Carefully drop 2-3 bagels into the boiling water bath, making sure they are not overcrowded. Boil them for about 1 minute on each side. Remove the boiled bagels using a slotted spoon and place them back on the baking sheet.
- If you'd like to add toppings, sprinkle them onto the wet surface of the bagels now.
- Bake the bagels in the preheated oven for 20-25 minutes, or until they turn golden brown.
