White Chocolate Raspberry Meringue Kisses

White Chocolate Raspberry Meringue Kisses are delicate and sweet treats that combine the light and airy texture of meringue with the rich flavors of white chocolate and raspberry. Here's a recipe to guide you in making these delightful kisses:
Ingredients:
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup white chocolate chips or chopped white chocolate
- 1/4 cup freeze-dried raspberries, crushed into a powder
Instructions:
- Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
- In a clean mixing bowl, beat the egg whites on medium speed until frothy. Add the cream of tartar and continue to beat until soft peaks form.
- Gradually add the granulated sugar, about 1 tablespoon at a time, while continuing to beat. Increase the speed to high and beat until stiff, glossy peaks form.
- Gently fold in the vanilla extract until well incorporated.
- In a microwave-safe bowl, melt the white chocolate in short intervals, stirring between each interval, until smooth and melted.
- Drizzle the melted white chocolate over the meringue mixture, then sprinkle the crushed freeze-dried raspberries over the top.
- Use a rubber spatula to gently fold the white chocolate and raspberries into the meringue, creating a marbled effect. Be careful not to overmix; you want swirls of white chocolate and raspberry throughout the meringue.
- Fit a piping bag with a large star tip and fill it with the meringue mixture. Pipe small kiss-shaped mounds onto the prepared baking sheet, spacing them about an inch apart.
- Bake the meringue kisses in the preheated oven for about 1 to 1 1/2 hours, or until they are crisp and dry to the touch. The baking time may vary, so keep an eye on them to avoid overbaking.
- Once the meringue kisses are done baking, turn off the oven and leave the kisses inside to cool completely. This will help them dry out and retain their crisp texture.
- Once cooled, carefully remove the meringue kisses from the parchment paper. They should easily lift off without sticking.
- Store the White Chocolate Raspberry Meringue Kisses in an airtight container at room temperature for up to a week.
These White Chocolate Raspberry Meringue Kisses are a delightful combination of sweet meringue, creamy white chocolate, and tart raspberry flavors. They make a lovely treat for special occasions, afternoon tea, or as a homemade gift. Enjoy their delicate texture and burst of flavors!
