Ingredients:

  • 2 cups grated carrots
  • 1 cup milk
  • 1/2 cup sugar (adjust to taste)
  • 2 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (such as almonds, cashews, or pistachios) for garnish
  • A pinch of saffron strands (optional)

Instructions:

  1. Heat ghee in a non-stick pan or skillet over medium heat.
  2. Add the grated carrots to the pan and sauté them in ghee for about 5 minutes until they soften slightly.
  3. Add milk to the pan and cook the carrots in milk, stirring occasionally, until the milk reduces and thickens. This should take about 15-20 minutes.
  4. Add sugar to the pan and mix well. Continue cooking and stirring until the sugar dissolves and the mixture thickens further.
