Ingredients:
- 2 cups grated carrots
- 1 cup milk
- 1/2 cup sugar (adjust to taste)
- 2 tablespoons ghee (clarified butter)
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (such as almonds, cashews, or pistachios) for garnish
- A pinch of saffron strands (optional)
Instructions:
- Heat ghee in a non-stick pan or skillet over medium heat.
- Add the grated carrots to the pan and sauté them in ghee for about 5 minutes until they soften slightly.
- Add milk to the pan and cook the carrots in milk, stirring occasionally, until the milk reduces and thickens. This should take about 15-20 minutes.
- Add sugar to the pan and mix well. Continue cooking and stirring until the sugar dissolves and the mixture thickens further.
- Add cardamom powder and saffron strands (if using) to the pan. Mix well to incorporate the flavors.
