  • 2 cups grated carrots
  • 1 cup milk
  • 1/2 cup sugar (adjust to taste)
  • 2 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (such as almonds, cashews, or pistachios) for garnish
  • A pinch of saffron strands (optional)


  1. Heat ghee in a non-stick pan or skillet over medium heat.
  2. Add the grated carrots to the pan and sauté them in ghee for about 5 minutes until they soften slightly.
  3. Add milk to the pan and cook the carrots in milk, stirring occasionally, until the milk reduces and thickens. This should take about 15-20 minutes.
  4. Add sugar to the pan and mix well. Continue cooking and stirring until the sugar dissolves and the mixture thickens further.
  5. Add cardamom powder and saffron strands (if using) to the pan. Mix well to incorporate the flavors.
  6. Cook for a few more minutes until the halwa reaches a desired consistency, where the carrots are cooked and the mixture has thickened.
