Chinese Chicken Salad

Ingredients
- 4 cups thinly sliced Napa or green cabbage
- 2 cups thinly sliced red cabbage
- 1 cup shredded or matchstick carrots
- 2 cups pre cooked and shredded or cubed chicken
- 1/2 cup sliced green onions
- 1/4 cup toasted sliced almonds
- 1 cup drained mandarin oranges in water
- 1/4 cup cilantro
- 3/4 cup won ton strips or chow mein noodles
- 2 tablespoons sesame seeds
Dressing:
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- 2 tablespoons toasted sesame oil
- 2 cloves crushed garlic
- 2 teaspoons freshly minced ginger
- 1 teaspoon sugar
- 1 teaspoon pepper
Instructions
- Prepare the dressing by combining soy sauce, rice wine vinegar, toasted sesame oil, crushed garlic, minced ginger, sugar, and pepper in a small bowl. Whisk until well combined.
- In a large mixing bowl, combine thinly sliced Napa cabbage, shredded carrots, sliced green onions, and cooked chicken.
- Add drained mandarin oranges and cilantro to the bowl and toss all the ingredients together.
- Drizzle the dressing over the salad and toss everything together until the dressing is evenly distributed.
- Top the salad with won ton strips or chow mein noodles and sesame seeds just before serving.
