Dahi Aloo Ki Sabji, also known as Potato Curry in Yogurt Sauce, is a delicious and tangy Indian dish made with potatoes and yogurt-based gravy. Here's a recipe to make it:

Ingredients:

  • 3 medium-sized potatoes, boiled, peeled, and cubed
  • 1 cup plain yogurt (dahi)
  • 2 tablespoons oil or ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 2 green chilies, slit lengthwise
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. In a bowl, whisk the yogurt until smooth and set it aside.
  2. Heat oil or ghee in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Add slit green chilies, ginger paste, and garlic paste. Sauté for a minute until the raw aroma disappears.
  5. Lower the heat and add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well to combine the spices with the onion mixture.
  6. Add the cubed boiled potatoes and gently toss them in the spice mixture, ensuring the potatoes are well coated.
  7. Cook for a few minutes, stirring occasionally, to allow the flavors to meld.
  8. Reduce the heat to low and add the whisked yogurt. Stir continuously to prevent curdling and ensure the yogurt blends well with the spices.
  9. Simmer for a few more minutes, stirring occasionally, until the curry thickens slightly.
  10. Garnish with fresh coriander leaves.
