Ingredients:
- 3 medium-sized potatoes, boiled, peeled, and cubed
- 1 cup plain yogurt (dahi)
- 2 tablespoons oil or ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- In a bowl, whisk the yogurt until smooth and set it aside.
- Heat oil or ghee in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add slit green chilies, ginger paste, and garlic paste. Sauté for a minute until the raw aroma disappears.
- Lower the heat and add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well to combine the spices with the onion mixture.
- Add the cubed boiled potatoes and gently toss them in the spice mixture, ensuring the potatoes are well coated.
- Cook for a few minutes, stirring occasionally, to allow the flavors to meld.
- Reduce the heat to low and add the whisked yogurt. Stir continuously to prevent curdling and ensure the yogurt blends well with the spices.
- Simmer for a few more minutes, stirring occasionally, until the curry thickens slightly.
- Garnish with fresh coriander leaves.
