Ingredients:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 1 cup hung curd (thick yogurt)
  • 1/2 cup fresh cream
  • 2 tablespoons grated cheese (optional)
  • 2 tablespoons cashew nut paste
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon garam masala
  • 1 teaspoon white pepper powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cardamom powder
  • Salt to taste
  • 2 tablespoons melted butter
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. In a large bowl, combine hung curd, fresh cream, grated cheese (if using), cashew nut paste, ginger-garlic paste, lemon juice, garam masala, white pepper powder, turmeric powder, red chili powder, cardamom powder, and salt. Mix well to form a smooth marinade.
  2. Add the chicken pieces to the marinade and coat them well. Make sure each piece is covered with the marinade. Marinate the chicken for at least 2-3 hours, or preferably overnight in the refrigerator. This helps the flavors to infuse and makes the chicken tender.
  3. Preheat your grill or oven to medium-high heat. If using a grill, preheat it and grease the grates to prevent sticking. If using an oven, preheat it to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Thread the marinated chicken pieces onto skewers. If using wooden skewers, make sure to soak them in water for about 20 minutes beforehand to prevent them from burning.
  5. Place the chicken skewers on the preheated grill or on the prepared baking sheet if using the oven.
