Ingredients:
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 3 cups whole milk
- 1 teaspoon vanilla extract
- 4 ounces semi-sweet chocolate, finely chopped
- Whipped cream or chocolate shavings for garnish (optional)
Instructions:
- In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
- Gradually pour in the milk, whisking constantly to prevent any lumps from forming.
- Place the saucepan over medium heat and cook the mixture, stirring continuously, until it thickens and comes to a gentle boil. This should take about 8-10 minutes.
- Once the mixture reaches a boil, reduce the heat to low and continue to cook for an additional 2 minutes, stirring constantly.
- Remove the saucepan from the heat and add the vanilla extract and chopped chocolate. Stir until the chocolate is completely melted and the mixture is smooth and creamy.
- Pour the pudding into individual serving dishes or a large bowl.
- To prevent a skin from forming, place a piece of plastic wrap directly on the surface of the pudding.
- Allow the pudding to cool to room temperature, and then refrigerate for at least 2 hours or until chilled and set.
