Ingredients:

  • 8 ounces (225 grams) of noodles (such as spaghetti, udon, or rice noodles)
  • 3 tablespoons vegetable oil
  • 4-5 cloves of garlic, minced
  • 2 teaspoons chili paste or chili sauce (adjust according to your spice preference)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Cook the noodles according to the package instructions until al dente. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium heat.
  3. Add the minced garlic to the pan and sauté for about 1 minute until fragrant and lightly golden.
  4. Add the chili paste or chili sauce to the pan and stir-fry for another 30 seconds.
  5. Add the cooked noodles to the pan and toss well to coat them evenly with the chili garlic mixture.
  6. In a small bowl, mix together the soy sauce, oyster sauce (if using), sugar, and sesame oil. Pour this sauce over the noodles and stir-fry for another 2-3 minutes until everything is well combined and heated through.
  7. Taste the noodles and adjust the seasoning if needed, adding more soy sauce or chili paste according to your preference.
  8. Remove the noodles from the heat and garnish with chopped green onions.
  9. Serve the chili garlic noodles hot as a main dish or as a side dish with your favorite Asian-inspired meal.
