Ingredients:

For the chicken filling:

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup onion, finely chopped

  • 1/4 cup carrot, grated
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika or chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons oil

For the roll:

  • 4-6 large tortilla wraps or flatbreads
  • Mayonnaise or your favorite sauce
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced cucumbers
  • Grated cheese (optional)

Instructions:

  1. In a large skillet, heat the oil over medium heat. Add the onions, bell pepper, carrot, garlic, and ginger. Sauté until the vegetables are tender.
  2. Add the cooked chicken, paprika or chili powder, ground cumin, ground coriander, salt, and pepper. Stir well to combine and cook for an additional 2-3 minutes until the chicken is heated through and well-coated with the spices. Remove from heat and set aside.
  3. Warm the tortilla wraps or flatbreads in a microwave or on a stovetop griddle for a few seconds to make them pliable.
  4. Spread a thin layer of mayonnaise or your favorite sauce on each tortilla wrap or flatbread.
  5. Place a lettuce leaf on one end of the tortilla wrap or flatbread, leaving some space at the edges.
  6. Spoon a portion of the chicken filling onto the lettuce leaf. Add sliced tomatoes, sliced cucumbers, and grated cheese if desired.
  7. Roll the tortilla wrap or flatbread tightly, starting from the end with the filling. Fold in the sides as you roll to create a secure and compact roll.
  8. Repeat the process with the remaining tortilla wraps or flatbreads and chicken filling.
  9. Optionally, you can lightly grill or toast the chicken rolls on a stovetop griddle or in a panini press for a crispy outer texture. This step is optional but adds a nice touch to the rolls.
  10. Slice the chicken rolls diagonally into smaller portions, if desired, and serve them as a snack or appetizer. They can also be served as a light meal with a side salad.
