Ingredients
Meat Miso:
- 50g Ground Pork (1.8 oz)
- 1/4 Onion (70g/2.5 oz)
- 1 Fresh Shiitake Mushroom
- 1 tsp Grated Ginger Root
- 1 tsp Grated Garlic
- 4 tbsp Miso
- 1 tbsp Sake
- 1 tbsp Mirin
- 1 tbsp Sugar
- 3 tbsp Chicken Stock, or water
- 1 tbsp Ground Black Sesame Seeds
- 2 tsp Sesame Oil
- 2 bags Frozen Udon Noodles
Toppings:
- 2/3 Cucumber
- 10cm Long Green Onion (Naganegi), white part, chopped (3.9")
- Beni Shoga, pickled ginger, chopped
- Grated Ginger Root
- Grated Garlic
- Sichuan Chili Oil, rayu
- Apple Vinegar, or your favorite type of vinegar
