Ingredients

Meat Miso:

  • 50g Ground Pork (1.8 oz)
  • 1/4 Onion (70g/2.5 oz)
  • 1 Fresh Shiitake Mushroom
  • 1 tsp Grated Ginger Root
  • 1 tsp Grated Garlic
  • 4 tbsp Miso
  • 1 tbsp Sake
  • 1 tbsp Mirin
  • 1 tbsp Sugar
  • 3 tbsp Chicken Stock, or water
  • 1 tbsp Ground Black Sesame Seeds
  • 2 tsp Sesame Oil
  • 2 bags Frozen Udon Noodles

Toppings:

  • 2/3 Cucumber
  • 10cm Long Green Onion (Naganegi), white part, chopped (3.9")
  • Beni Shoga, pickled ginger, chopped
  • Grated Ginger Root
  • Grated Garlic
  • Sichuan Chili Oil, rayu
  • Apple Vinegar, or your favorite type of vinegar
