- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups mixed spring greens (such as spinach, kale, chard), chopped
- 4 cups vegetable broth
- 1 medium potato, peeled and diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Juice of 1/2 lemon
