Mouthwatering Malai Rice Phirni

Malai Rice Phirni is a delicious dessert that is made with rice, milk, sugar, and flavored with cardamom and saffron. Here is a recipe to make it at home:

Ingredients:

  • 1/2 cup rice
  • 1 liter milk
  • 1 cup sugar
  • 1 cup fresh cream (malai)
  • 1/2 tsp cardamom powder
  • A few strands of saffron
  • Chopped nuts for garnishing

Instructions:

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. Drain the rice and grind it to a coarse paste.
  3. Heat milk in a heavy-bottomed pan and bring it to a boil.
  4. Add the ground rice paste to the milk and stir continuously to avoid lumps.
  5. Cook the mixture on low heat until the rice is completely cooked and the mixture has thickened.
  6. Add sugar and stir until it dissolves completely.
  7. Add the fresh cream (malai), cardamom powder, and saffron strands and mix well.
  8. Cook for another 5-10 minutes until the mixture thickens to the desired consistency.
  9. Pour the mixture into serving bowls and let it cool to room temperature.
  10. Refrigerate for at least 1-2 hours.
  11. Garnish with chopped nuts and serve chilled.
