Mouthwatering Malai Rice Phirni
Malai Rice Phirni is a delicious dessert that is made with rice, milk, sugar, and flavored with cardamom and saffron. Here is a recipe to make it at home:
Ingredients:
- 1/2 cup rice
- 1 liter milk
- 1 cup sugar
- 1 cup fresh cream (malai)
- 1/2 tsp cardamom powder
- A few strands of saffron
- Chopped nuts for garnishing
Instructions:
- Wash the rice thoroughly and soak it in water for 30 minutes.
- Drain the rice and grind it to a coarse paste.
- Heat milk in a heavy-bottomed pan and bring it to a boil.
- Add the ground rice paste to the milk and stir continuously to avoid lumps.
- Cook the mixture on low heat until the rice is completely cooked and the mixture has thickened.
- Add sugar and stir until it dissolves completely.
- Add the fresh cream (malai), cardamom powder, and saffron strands and mix well.
- Cook for another 5-10 minutes until the mixture thickens to the desired consistency.
- Pour the mixture into serving bowls and let it cool to room temperature.
- Refrigerate for at least 1-2 hours.
- Garnish with chopped nuts and serve chilled.
