Ingredients:
For the cake:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1 cup chopped nuts (walnuts, almonds, or pecans)

- 2 cups whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1/4 cup cornstarch
- 1 tsp vanilla extract
Instructions:
For the cake:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar together until light and fluffy.
- Beat in eggs, one at a time, then stir in vanilla extract.
- Gradually add the flour mixture, alternating with the milk and mixing well after each addition.
- Stir in the chopped nuts.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
For the custard:
- In a medium saucepan, heat milk over medium heat until it starts to steam.
- In a separate bowl, whisk together sugar, egg yolks, cornstarch, and vanilla extract until smooth.
- Gradually whisk the hot milk into the egg mixture.
- Pour the mixture back into the saucepan and cook over medium heat, whisking constantly, until it thickens and coats the back of a spoon.
- Remove the custard from heat and let it cool to room temperature.
To assemble:
- Cut the cooled cake into small squares or slices and place them in a serving dish.
- Pour the cooled custard over the cake and spread it evenly.
- Chill the cake in the refrigerator for at least 2 hours or until the custard sets.
- Serve the Nutty Custard Cake chilled, garnished with chopped nuts if desired.
