Apple sbriciolata

INGREDIENTS

For the pastry:

  • 100g (8 tbsp) of butter, soft
  • 1 egg
  • 80g (½ cup) of powdered sugar
  • 150g (⅔ cup) of yogurt
  • 5 ml (1 tsp) of vanilla extract
  • 2 g (1 tsp) of baking soda
  • 460g (3 ⅝ cup) of all-purpose flour

For the cream:

  • 300g (1 ½ cup) of mascarpone
  • 2 eggs
  • 40g (3 tbsp) of powdered sugar
  • 5 ml (1 tsp) of vanilla extract
  • 5 g (1 tsp) of cornstarch
  • 15 ml (1 tbsp) of milk
  • 3 apples, peeled and sliced
  • cinnamon

METHOD

1. In a large bowl whisk soft butter with powdered sugar, egg, vanilla, and yogurt. Add flour and baking soda, and mix until smooth dough forms.

2. Separate the dough into ⅔ and ⅓. Spread ⅔ of the dough on top of a 28cm baking pan, covering the bottom and the sides.

3. For the cream whisk mascarpone with eggs, sugar, vanilla, cornstarch, and milk.

4. Pour the cream on top of the pastry and cover it with apple slices. Sprinkle pieces of the dough on top.

5. Bake at 190°C/375°F for 35 minutes.
