Instant Pot Stuffed Peppers are a hit for busy weeknights! The cheesy beef and rice filling is so satisfying and bakes beautifully in brilliant green or red peppers. Your family will love them!
A Recipe for Instant Pot Stuffed Peppers:
Ingredients:
- 4 bell peppers, tops cut off and seeds removed
- 1 lb. ground beef
- 1 cup cooked rice
- 1/2 cup chopped onion
- 1/2 cup chopped mushrooms
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 cup beef broth
- 1 cup tomato sauce
- 1 cup shredded cheddar cheese
Directions:
- In a large mixing bowl, combine the ground beef, cooked rice, chopped onion, chopped mushrooms, minced garlic, salt, black pepper, paprika, and dried oregano.
- Mix the ingredients together until well combined.
- Stuff each bell pepper with the meat mixture.
- Pour the beef broth and tomato sauce into the Instant Pot.
- Place the stuffed peppers in the Instant Pot.
- Close the Instant Pot lid and set to high pressure for 15 minutes.
- Once the timer goes off, use quick release to release the pressure.
- Open the lid and sprinkle shredded cheddar cheese on top of each stuffed pepper.
- Close the lid again and let the cheese melt for a few minutes.
- Serve the stuffed peppers hot.
