Ingredients:
- 8 slices of bread
- 4 ounces cream cheese, softened
- 1/2 cup diced fresh strawberries
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 2 eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- Powdered sugar, for garnish
Instructions:
- Trim the crusts off the bread and use a rolling pin to flatten each slice.
- In a mixing bowl, combine the cream cheese, strawberries, and 2 tablespoons of granulated sugar. Mix well.
- In another mixing bowl, combine the remaining granulated sugar and cinnamon.
- Spread a thin layer of the cream cheese mixture onto each flattened bread slice.
- Roll up the bread slices tightly around the cream cheese mixture.
- In a shallow dish, whisk together the eggs, milk, and vanilla extract.
- Dip each roll-up in the egg mixture, making sure to coat all sides evenly.
- Melt the butter in a non-stick skillet over medium heat.

- Remove the roll-ups from the skillet and immediately roll them in the cinnamon sugar mixture.
