Vegetable Shawarma

Recipe for Vegetable Shawarma.

Ingredients: For the Shawarma Marinade:

  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

For the Vegetables:

  • 2 bell peppers, sliced into strips
  • 1 red onion, sliced into thin wedges
  • 2 zucchinis, sliced lengthwise
  • 1 eggplant, sliced lengthwise
  • 8-10 small mushrooms, sliced

For Serving:

  • Pita bread
  • Hummus
  • Tzatziki sauce
  • Chopped fresh parsley

Instructions:

  1. In a small mixing bowl, whisk together olive oil, lemon juice, cumin, paprika, coriander, garlic powder, salt, black pepper, and cayenne pepper to make the shawarma marinade.
  2. Preheat the oven to 425°F (220°C).
  3. Arrange the sliced vegetables in a single layer on a baking sheet. Brush the shawarma marinade on both sides of the vegetables.
  4. Roast the vegetables in the oven for 20-25 minutes, or until tender and slightly charred.
  5. While the vegetables are roasting, warm up the pita bread in the oven or on a griddle.
  6. To assemble the shawarma, spread a generous amount of hummus on each pita bread. Add the roasted vegetables on top of the hummus.
  7. Drizzle tzatziki sauce over the vegetables and sprinkle chopped fresh parsley on top.
  8. Roll up the pita bread tightly and serve immediately.
