Ingredients:

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Heat the olive oil in a large oven-safe skillet over medium heat.
  4. Add the onion to the skillet and sauté for 3-4 minutes or until it is softened and translucent.
  5. Add the chopped artichoke hearts to the skillet and sauté for another 2-3 minutes or until they are slightly browned.
  6. Pour the egg mixture into the skillet and stir gently to combine with the onions and artichokes.
  7. Sprinkle the grated Parmesan cheese over the top of the egg mixture.
  8. Bake the frittata in the preheated oven for 20-25 minutes or until it is golden brown and set.
  9. Remove the frittata from the oven and let it cool for a few minutes.
  10. Slice the frittata into wedges and serve hot.
