Chickpea Stew
Here's a recipe for a hearty and flavorful Chickpea Stew that is perfect for a comforting and healthy meal:
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 2 cans (15-ounce) chickpeas, drained and rinsed
- 2 cans (14.5-ounce) diced tomatoes
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups baby spinach leaves
- 1 tablespoon lemon juice
- Optional toppings: chopped fresh parsley, feta cheese
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes, or until the onion is translucent.
- Add the ground cumin, smoked paprika, ground coriander, and cayenne pepper to the pot and stir to combine.
- Add the drained and rinsed chickpeas, diced tomatoes, vegetable broth, diced red and yellow bell peppers, salt, and black pepper to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let the stew simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the baby spinach leaves and lemon juice and let the stew cook for an additional 1-2 minutes, or until the spinach has wilted.
- Taste the stew and adjust the seasoning as necessary.
- Serve the Chickpea Stew hot with chopped fresh parsley and crumbled feta cheese, if desired.
