Chickpea Stew

Here's a recipe for a hearty and flavorful Chickpea Stew that is perfect for a comforting and healthy meal:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 2 cans (15-ounce) chickpeas, drained and rinsed
  • 2 cans (14.5-ounce) diced tomatoes
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups baby spinach leaves
  • 1 tablespoon lemon juice
  • Optional toppings: chopped fresh parsley, feta cheese

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the ground cumin, smoked paprika, ground coriander, and cayenne pepper to the pot and stir to combine.
  4. Add the drained and rinsed chickpeas, diced tomatoes, vegetable broth, diced red and yellow bell peppers, salt, and black pepper to the pot and stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let the stew simmer for 20-25 minutes, or until the vegetables are tender.
  6. Stir in the baby spinach leaves and lemon juice and let the stew cook for an additional 1-2 minutes, or until the spinach has wilted.
  7. Taste the stew and adjust the seasoning as necessary.
  8. Serve the Chickpea Stew hot with chopped fresh parsley and crumbled feta cheese, if desired.
