Huli Huli Chicken is a Hawaiian-style grilled chicken dish that is sweet and savory. Here's a recipe for Huli Huli Chicken that you can make at home:

Ingredients:

  • 4-6 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/4 teaspoon black pepper
  • Pineapple slices (optional)

Instructions:

  1. In a large bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, Worcestershire sauce, minced garlic, grated ginger, and black pepper.
  2. Reserve 1/2 cup of the marinade for later use.
  3. Add the chicken thighs to the marinade and toss to coat.
  4. Cover and refrigerate for at least 2 hours, or overnight.
  5. Preheat your grill to medium-high heat.
  6. Remove the chicken from the marinade and discard the remaining marinade.
  7. Grill the chicken for 5-7 minutes on each side, or until fully cooked.
  8. During the last few minutes of grilling, brush the reserved marinade onto the chicken and add the pineapple slices to the grill, if using.
  9. Once the chicken is fully cooked and the marinade is caramelized, remove from the grill and let it rest for a few minutes.
