Ingredients:

  • 2 cans (14.75 ounces each) salmon, drained and flaked (or 2 cups cooked and flaked salmon)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Old Bay seasoning (or any seafood seasoning of your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour (for coating)
  • 2-3 tablespoons vegetable oil (for frying)
  • Lemon wedges, for serving

Instructions:

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, bell pepper (if using), minced garlic, parsley, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well to combine all the ingredients.
  2. Shape the mixture into patties of your desired size. You can make them smaller for appetizers or larger for a main course.
  3. Place the all-purpose flour on a plate and coat each salmon patty lightly with flour on all sides. This helps to bind the patties and gives them a crispy outer layer when cooked.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Carefully place the coated salmon patties in the skillet, a few at a time, without overcrowding the pan. Cook them for about 4-5 minutes per side, or until they turn golden brown and crispy. Flip them gently using a spatula.
  6. Once the patties are cooked, remove them from the skillet and transfer them to a paper towel-lined plate to drain any excess oil.
  7. Repeat the frying process with the remaining salmon patties.
  8. Serve the salmon patties hot with lemon wedges on the side for squeezing over the patties. They can be enjoyed as a main course with a side of vegetables or salad, or as a delicious burger patty in a bun with your favorite toppings.
