Ingredients:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • 2 cups mashed potatoes, cooled
  • 1 sheet puff pastry, thawed

Directions:

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, thyme, salt, and pepper, and mix well.
  3. Transfer the meat mixture to a 9x13-inch baking dish and shape it into a loaf.
  4. Spread the mashed potatoes over the top of the meatloaf, smoothing it out with a spatula.
  5. Roll out the puff pastry sheet on a floured surface to fit over the top of the meatloaf and mashed potatoes, and carefully place it over the top.
  6. Trim any excess pastry from the edges, and use a fork to crimp the edges of the pastry to the sides of the baking dish.
  7. Brush the beaten egg over the top of the pastry.
  8. Bake the meatloaf for 45-50 minutes, or until the pastry is golden brown and the meat is cooked through.
  9. Remove the meatloaf from the oven and let it cool for a few minutes before slicing and serving.
