Malai Kulfi Recipe

Malai Kulfi is a delicious Indian frozen dessert that is made with milk, sugar, and flavored with cardamom, saffron, and pistachios. Here's a recipe to make it at home:

Ingredients:

  • 4 cups whole milk
  • 1/2 cup sweetened condensed milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1/4 teaspoon ground cardamom
  • A pinch of saffron threads, soaked in 1 tablespoon of warm milk
  • 1/4 cup chopped pistachios

Instructions:

  1. In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent the milk from sticking to the bottom of the pan.
  2. Once the milk comes to a boil, lower the heat to medium-low and let it simmer until it reduces to about 1/3 of its original volume. This can take about 45-50 minutes. Stir occasionally.
  3. Add the sweetened condensed milk, heavy cream, sugar, ground cardamom, and soaked saffron threads to the pan and stir until everything is well combined.
  4. Continue to simmer the mixture on low heat for another 10-15 minutes until it thickens slightly.
  5. Turn off the heat and let the mixture cool to room temperature.
  6. Once the mixture has cooled, pour it into a blender and blend until it becomes smooth.
  7. Add the chopped pistachios to the mixture and stir until they are evenly distributed.
  8. Pour the mixture into kulfi molds or small cups.
  9. Cover the molds or cups with aluminum foil and freeze for at least 6 hours or overnight.
  10. When you're ready to serve, remove the kulfi from the molds or cups by running them under warm water for a few seconds. Serve the kulfi immediately and enjoy!
