How to make Delicious Eggplant
Eggplant is a versatile and delicious vegetable that can be used in a variety of dishes. Here is a recipe for making a delicious and easy eggplant dish:
Ingredients:
- 1 large eggplant, cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat your oven to 400°F (200°C).
- Place the eggplant cubes in a large mixing bowl and add the olive oil, salt, and pepper. Toss to coat the eggplant cubes evenly.
- Spread the eggplant cubes in a single layer on a baking sheet lined with parchment paper.
- Roast the eggplant in the preheated oven for 20-25 minutes, or until it is tender and lightly browned.
- While the eggplant is roasting, heat a skillet over medium-high heat.
- Add the minced garlic and red pepper flakes to the skillet and cook for 1-2 minutes, or until the garlic is fragrant.
- Add the roasted eggplant cubes to the skillet and toss to combine with the garlic mixture.
- Add the chopped parsley and basil to the skillet and toss to combine.
- Sprinkle the grated Parmesan cheese over the eggplant and serve immediately.
